Hatch Mild Red Chile Powder

This is the best New Mex chili powder you can find. It has a deep, smooth chili flavor without much heat or bitterness. Fantastic for chili or making bbq rubs. It is the secret ingredient in my contest winning chili.

I visited New Mexico and Santa Fe for the first time in Spring of 2007. I went into The Chile Shop after eating enchiladas for pretty much every meal at almost all the restaurants we visited. I bought the Hatch Mild Red Chile Powder uncertain whether this would actually come close to duplicating the authentic Santa Fe enchilada sauce. To my absolute delight, this Chile Powder is amazing and tastes almost identical to the authentic sauce!! In fact, my husband has become hooked on "my enchiladas" and always requests me to make them for every special occasions: Christmas, his Birthday, our Anniversary, and almost everyday, actually. He says I have ruined restaurant enchiladas for him because "my" version is SO much better. Ever since visiting Santa Fe in 2007, I have ONLY bought the Hatch Mild Red Chile Powder from The Chili Shop to make enchilada sauce.
