Not sure why there haven't been any recent reviews, but this is delicious chile. Besides my enchiladas, my husband makes a great pasta sauce, a must for chile and many other dishes. Can't go wrong, year after year. Fantastic!

My dad was from Tucumcari, so I grew up on New Mexico chile. We would make a trip from CA every year to pick up a bunch of Hatch chiles & powder (didn't really have mail-order options then).
Since moving to NC, the "New Mexico Chile" available around here just doesn't have the right flavor - so I was quite happy to find this. It's exactly what I grew up on! I order several pounds every few months and use it constantly. The only reason I get the medium instead of hot is so I can put that much more in for the flavor!

We moved from Santa Fe over a decade ago, so we order hatch chile from the Chile Shop regularly. It's a problem if we run out. Highly recommend for fantastic chile sauce. For us, there's no substitute.

i've made red sauces with a number of different powders from the chile shop. The hatch medium for me is precisely right: spicy but not over-spicy and a really rich flavor. i add a tbsp of good quality paprika, some browned garlic, and a little more cumin (roasted) and oregano than the package calls for. SERIOUSLY good, even by santa fe standards, which are seriously high.

Got the half pound bag and went through in about 4 batches of enchilada sauce. The receipe on the back of the bag is terrific. 10X better than any store bought sauce in a can. Moving up to the one pound bag today. BTW, you've got a nice, simple, easy to use web store.

I always have a couple bags of your Hatch medium red chilie powder on hand, one in a shaker on the counter and the rest tight in a dated ziplock refrigerated.
Shake on any foods you want to add zip to. Use instead of flour when dusting chicken pieces (or any meat or veg.) before baking. Add to marinades, salad dressings, brining solutions, and on and on.
Whenever my friend travels to Santa Fe I give her my list of items to get from your store.
I've also purchased your Christmas cards.
